I guess we can only speculate, since none of us (despite what some claim) actually know how much Mariah does to take care of her voice.
I don't wan't come across as one of those know it alls who think they know every detail of Mariah's life (because obviously none of us on here really do) but as a singer myself I can totally understand this situation. The voice itself is very unpredictable. The chords are the first to be hit by anything (cold, flus etc.) because they are positioned close to the mouth, making it very easy to pick something up and foil your voice. Also one thing that affects the voice the most is sleep. I know that when I have had hardly any sleep my voice sucks and I don't even sound like myself, so just think of Mariah when she's touring or promoting. She's said herself that she only gets about 3 hours sleep when she's working so yeah thats probably a big contributing factor to her voice being a little hoarse at times. She's only human after all.
I was slightly disappointed with the triumphant performance, but I wasn't really surprised. Its just not one of those songs that sounds good live.
